This is a class unlike any we offer. In this class we come close and are grateful for how our food comes to us. You will learn the method of killing a pig for food. Our pigs are pasture raised in open fields. They spend the majority of their lives on this land and this is where it ends, calmly and humanely, with thankful hands.

Anyone who wants to seriously learn how to harvest pigs for meat, sausage, bacon, charcuterie, prime cuts, stocks, lard, will want to take this class.

What is included:

  • ~70# meat in the form of:
    • Prime Cuts
    • Roasts
    • Ham
    • Bacon
    • Pancetta
    • Various Charcuterie(i.e. terrines, rillettes, sausages, etc.)
    • Every item that can be used will be
  • Learn how to humanely harvest a pig
  • General meat cookery demonstration
  • Traditional pork butchery and preservation
  • Packet of salt, herbs, and recipes
  • Hands-on approach both in the field and kitchen, all cutting is done by you with our guidance
